Brookie




If ever you can’t make a choice between a brownie and a cookie, then this is the recipe for you. I have recently loved making my doughs with peanut butter instead of butter and I have really been loving that.


This recipe therefore calls for two doughs. Firstly a layer of my peanut butter brownie dough, and a layer of my peanut butter brownie cookies.



Brownie dough :

Ingredients :

  • 75 g of peanut butter

  • 150g of dark chocolate

  • 50 g of white sugar

  • 100g light brown sugar

  • 2 eggs

  • A splash of vanilla extract

  • 80g of flour

  • 1/2 tsp of salt

Instructions :

  • Melt the chocolate on the stove with the peanut butter in a bain maire

  • Beat the sugars and eggs together on high speed until the mixture doubles in size and lightens in colour

  • When the chocolate mixture has cooled for a few minutes, gently fold it in into the sugar and egg mixture

  • Sift in the dry ingredients and mix with a spatula until just combined

  • Pour in a greased 9x9 pan


Cookie dough :

Ingredients :

  • 60 g of peanut butter

  • 75 g of sugar (half white half brown)

  • 50 g of almond milk

  • 75 g of flour

  • 2 g of baking soda

  • 100 g of chopped chocolate

Instructions :

  • Beat the peanut butter and the sugar on high speed

  • Add in the flour and the baking soda

  • Pour gradually the almond milk

  • Fold in the chopped chocolate

  • Place the cookie dough on top of the brownie batter

  • Bake at 170 for 16 min
