If ever you can’t make a choice between a brownie and a cookie, then this is the recipe for you. I have recently loved making my doughs with peanut butter instead of butter and I have really been loving that.
This recipe therefore calls for two doughs. Firstly a layer of my peanut butter brownie dough, and a layer of my peanut butter brownie cookies.
Brownie dough :
Ingredients :
75 g of peanut butter
150g of dark chocolate
50 g of white sugar
100g light brown sugar
2 eggs
A splash of vanilla extract
80g of flour
1/2 tsp of salt
Instructions :
Melt the chocolate on the stove with the peanut butter in a bain maire
Beat the sugars and eggs together on high speed until the mixture doubles in size and lightens in colour
When the chocolate mixture has cooled for a few minutes, gently fold it in into the sugar and egg mixture
Sift in the dry ingredients and mix with a spatula until just combined
Pour in a greased 9x9 pan
Cookie dough :
Ingredients :
60 g of peanut butter
75 g of sugar (half white half brown)
50 g of almond milk
75 g of flour
2 g of baking soda
100 g of chopped chocolate
Instructions :
Beat the peanut butter and the sugar on high speed
Add in the flour and the baking soda
Pour gradually the almond milk
Fold in the chopped chocolate
Place the cookie dough on top of the brownie batter
Bake at 170 for 16 min
