Banana cake



I honestly can’t decide if I prefer banana cake or banana bread, but knowing that this one pairs beautifully with cream cheese frosting might make me dethrone my beautiful banana bread.




For the cake :

Ingrédients :

  • 150 g of butter browned

  • 4 bananas mashed (about 450g)

  • A splash of vanilla

  • 3 eggs

  • 150 g of yogurt

  • 300 g of flour

  • 100 g of dark brown sugar

  • 50 g of caster sugar

  • 2 tsp of baking soda

  • 1 tsp of salt

Instructions :

  1. Brown the butter until golden brown

  2. Mash up the bananas and add in the butter

  3. Mix well and then incorporate the eggs one at the time

  4. Add in the vanilla and the yogurt

  5. In a separate bowl whisk together the weighed flour, sugars, baking soda and salt

  6. Fold in the dry ingredients into the wet ones

  7. Pour into a greased sheet pan and bake for 35 min at 175


For the frosting :

Ingrédients :

  • 50 g of salted butter

  • 100 g of cream cheese

  • 120 g of confectioners sugar

Instructions :

  1. Cream the butter and the cream cheese until light and fluffy

  2. Add in the sugar and mix until we’ll combined

  3. Top the cake when cooled and keep refrigerated
