carrot cake

For the cake:

Ingredients :

  • 2 cups of flour

  • 2 cups of sugar

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 1/2 tsp of slat

  • 1 tbsp of cinnamon

  • 1 cup of oil

  • 4 eggs

  • A splash of vanilla

  • 3 cups of shredded carrots

Instructions :

  • Mix together all the dry ingredients after sifting them

  • Add in the oil, the vanilla and mix in one egg at a time

  • Shred the carrots and add them in

  • Bake at 180 for 40 min in a rectangular pan. If you wish to do a layer cake, bake at 180 for 30 min in round cake pans, separate in 3


For the cream cheese frosting : (double or triple this recipe)

Ingredients :

  • 75 g of cream cheese

  • 30 g of butter

  • 1/2 tsp vanilla

  • 1 c. Of powdered sugar

Instructions :

  • Cream the cream cheese for about 3 min

  • Add in the butter and cream the two until light and fluffy about 3 min

  • Add the vanilla and sift in the powdered sugar (you might need to add more if ever the frosting is too runny)
