For the cake:
Ingredients :
2 cups of flour
2 cups of sugar
1 tsp of baking powder
1 tsp of baking soda
1/2 tsp of slat
1 tbsp of cinnamon
1 cup of oil
4 eggs
A splash of vanilla
3 cups of shredded carrots
Instructions :
Mix together all the dry ingredients after sifting them
Add in the oil, the vanilla and mix in one egg at a time
Shred the carrots and add them in
Bake at 180 for 40 min in a rectangular pan. If you wish to do a layer cake, bake at 180 for 30 min in round cake pans, separate in 3
For the cream cheese frosting : (double or triple this recipe)
Ingredients :
75 g of cream cheese
30 g of butter
1/2 tsp vanilla
1 c. Of powdered sugar
Instructions :
Cream the cream cheese for about 3 min
Add in the butter and cream the two until light and fluffy about 3 min
Add the vanilla and sift in the powdered sugar (you might need to add more if ever the frosting is too runny)
