Gluten free carrot cake



Ingredients :

  • 45 g of melted coconut oil

  • 100 g of brown sugar

  • 3 eggs

  • 100 g of unsweetened applesauce

  • vanilla extract

  • 135 g of oat flour

  • 2 g of baking soda

  • 2 g of baking powder

  • A pinch of salt

  • 2 g of cinnamon

  • A pinch of nutmeg

  • 2 grated carrots (about 175g)


Instructions :

  1. Whisk together the oil and sugar until we’ll combined

  2. Add in the eggs one at the time, whisking well in between each one

  3. Add in the applesauce and the vanilla extract

  4. Fold in the previously mixed together dry ingredients

  5. Fold in the carrots until just combined

  6. Pour into a 24 cm diameter round pan and bake at 180 for 35 min

  7. Enjoy !
