Ingredients :
2 eggs
1/4 cup white sugar
1/4 light brown sugar
1/3 cup peanut butter
3/4 cup almond milk
1 & 1/2 cup of flour
1 tsp of baking soda
1 & 1/2 tsp of cinnamon
1/2 tsp nutmeg
4 shredded carrots
Instructions :
Whisk the eggs and sugars until lightened in colour and tripled in size
Add in the rest of the wet ingredients and whisk until combined
Sift in the dry ingredients and fold in with a spatula, be carful not to overman
Fold in the carrots
Pour into a greased loaf pan
Bake at 180 for 55 min
