For the cake :
Ingredients :
115 g of butter
3/4 cup of sugar
2 eggs
A splash of vanilla
1/2 cup of buttermilk (or milk with a splash of lemon juice to make it thicker)
1 lemon zested and half of the lemon’s juice
1 1/2 cup of flour
pinch of salt
2 tsp of baking powder
Instructions :
Cream the butter with the sugar
Add one egg at a time and be sure to mix until fully incorporated each time
Add the rest of the wet ingredients
Sift in the dry ingredients
Be sure to not overmix (the batter will be too runny and not get that fluffy feel to it otherwise)
Poor into a greased loaf pan and bake at 175 for 45 min (keep an eye on it)
For the glaze :
Ingredients :
1 cup of powdered sugar
1 tbsp of milk
The juice of half of a lemon
Instructions :
Mix the powdered sugar with the milk until desired consistency (should be a little runny)
Add the lemon juice
Poor over the cake, when it has fully cooled down
Let sit for at least an hour before cutting into it
