starbucks’ lemon loaf cake

For the cake :

Ingredients :

  • 115 g of butter

  • 3/4 cup of sugar

  • 2 eggs

  • A splash of vanilla

  • 1/2 cup of buttermilk (or milk with a splash of lemon juice to make it thicker)

  • 1 lemon zested and half of the lemon’s juice

  • 1 1/2 cup of flour

  • pinch of salt

  • 2 tsp of baking powder

Instructions :

  • Cream the butter with the sugar

  • Add one egg at a time and be sure to mix until fully incorporated each time

  • Add the rest of the wet ingredients

  • Sift in the dry ingredients

  • Be sure to not overmix (the batter will be too runny and not get that fluffy feel to it otherwise)

  • Poor into a greased loaf pan and bake at 175 for 45 min (keep an eye on it)

For the glaze :

Ingredients :

  • 1 cup of powdered sugar

  • 1 tbsp of milk

  • The juice of half of a lemon

Instructions :

  • Mix the powdered sugar with the milk until desired consistency (should be a little runny)

  • Add the lemon juice

  • Poor over the cake, when it has fully cooled down

  • Let sit for at least an hour before cutting into it
