carrot cupcakes

Ingredients :

  • 1/3 c. of oil

  • 1 c. of sugar

  • 2 eggs

  • 3 medium sized carrots shredded

  • 1/3 c. of water

  • 1 & 1/2 c. of flour

  • 1 tsp of baking soda

  • 1/2 tsp of salt

  • 1/4 tsp of baking powder

  • 1/2 tsp of cinnamon

Instructions :

  1. Mix the sugar with the oil until fully combined

  2. Add in the eggs one at a time and be sure to mix well

  3. Add in the carrots and the water

  4. Sift in the dry ingredients and be careful to not overmix otherwise the cupcakes won’t rise well

  5. Bake at 180° for 20 min

  6. Let cool fully before frosting

Cream cheese frosting :

Ingredients :

  • 75 g of cream cheese

  • 30 g of butter

  • 1/2 tsp vanilla

  • 1 c. Of powdered sugar

Instructions :

  1. Cream the cream cheese

  2. Add in the butter and cream the two until light and fluffy

  3. Add the vanilla and sift in the powdered sugar (you might need to add more if ever the frosting is too runny)
