red velvet cupcakes

For the cupcakes :


Ingredients:

  • 1 & 1/3 cups of cake flour

  • 3 tbsp of cocoa powder

  • 1 &1/2 tsp of baking powder

  • Pinch of salt

  • 60 g of softened butter

  • 2/3 cup of white sugar

  • 2 large eggs

  • 1/3 cup of vegetable oil (not to the brink)

  • 1/2 cup of buttermilk

  • 1 tbsp of vanilla

  • 1/2 tsp of white vinegar

  • 1 tbsp of red food colouring

Instructions :

1. Cream the butter then add the sugar and cream together.

2. Beat in the eggs one at a time.

3. Add the rest of the wet ingredients (vinegar, oil, buttermilk, vanilla, red food colouring).

4. Sift in the dry ingredients. Be careful to not overmix !


Bake at 160 for 18 min.

Makes 16 cupcakes (fill to 2/3 of the tins)


For the cream cheese frosting :


Ingredients :

  • 80 g of softened butter

  • 170 g of softened cream cheese

  • Splash of vanilla

  • 1/8 tsp of salt

  • 2 and 1/2 cups of icing sugar

  • 6 tbsp of cornstarch (or 3 Tbsp of arrowroot and 3 Tbsp of cornstarch)

Instructions :

1. Cream the butter then add the cream cheese.

2. Sift in the icing sugar in 5 times.

3. Add the wet ingredients.

4. Let cool in the fridge for about an hour.

5. Add the cornstarch until you find a good consistency.


Frost the cupcakes when they have cooled down. Keep refrigerated (otherwise the icing will melt)
