Vanilla cupcakes
Ingredients :
150 g of flour
1 and 1/4 tsp of baking powder
1/2 tsp of salt
150 g of sugar
2 eggs
A splash of vanilla extract
1/2 cup of buttermilk (add in a 1 tsp of vinegar or lemon juice)
Instructions :
Preheat the oven at 180 celsius
Mix all of the dry ingredients in a bowl
Make the buttermilk
Whip up the butter until light and fluffy
Add in the sugar and mix until fluffy
Add in the eggs one at the time, making sure you scrape the bowl in between
Add in the dry ingredients and the buttermilk one at a time in thirds
Don’t forget top scrape the bowl
Pour into 12 lined cupcake tins and bake for 22 minutes
After the cupcakes are baked, let them cool before cutting into the middle, creating a hole to fill it with strawberry jam.
Add the strawberry buttercream on top to decorate !
Strawberry buttercream frosting
Ingredients :
50 g unsalted butter
50 g salted butter
200g confectionners sugar
2 tbsp of mixed strawberries
Instructions :
Whip up the butters until light and fluffy
Add in the sugar in a sigle batch and whip up until fluffy
Mix up some strawberries and gently fold them into the buttercream
