Chocolate bavarois



This chocolatey dessert is so airy, you feel like a cloud when you eat it! The coolest thing is that it is soooo simple yet looks hard!




For the génoise cake :

Ingredients:

  • 2 œufs

  • 60 g of white sugar

  • 60 g of flour

Instructions :

  1. Separate the whites from the yolks

  2. Whip up the egg yolks with the sugar

  3. Sieve in the flour

  4. Whip up the egg whites till stiff peaks

  5. Pour the batter into a round pan and bake at 180 for 13 min

For the chocolate mousse :

Ingredients :

  • 600 ml of heavy whipping cream

  • 6 gelatin leaves

  • 300 g of chocolate (I mix dark and milk chocolate)

Instructions :

  1. Place the gelatin in a bowl of cold water and let sit

  2. Melt the chocolate with 12 tsp of water

  3. Place the gelatin leaves in the chocolate and let to cool

  4. Whip up the heavy cream

  5. Fold in the cooled chocolate mixture

  6. Pour onto the cooled génoise

  7. Place in the fridge for at least 3 hours

  8. I shaved chocolate on top for decor
