I used to not be a fan of cobblers, but this one stole my heart, as it uses raspberries (all-time best berry in my opinion)
Ingredients :
125 g of sugar
125 g of water
200 g of salted butter
180 g of flour
1/2 tsp of salt
2 & 1/2 tsp of baking powder
80 ml of almond milk
1 cup frozen raspberries
10 g of sugar for topping
Instructions :
Preheat oven at 180
Pour sugar and water in a saucepan and heat up until sugar is completely dissolved
In a separate bowl cube cold butter
Add in the flour, baking powder and salt and mix with fingertips until flour and butter are well combined
Pour in the almond milk and mix with a fork until the dough no longer sticks to the edges of the bowl
Roll out the dough of a piece of parchment paper, lightly floured, into a circular shape
Add on the berries of your choice, I chose raspberries and roll the dough
Cut it into about 10 pieces and place in a square greased dish
Pour the sugar syrup over the sliced dough and top with 10 g of sugar
Bake for 1 hour
