If you love strawberries and cake, this is the recipe for you. My cousin had asked me to bake her a strawberry cake for her birthday and this is what I delivered. I paired this cake with a vanilla buttercream recipe, and in between the strawberry layers, and chopped up some real strawberries, which I believe paired beautifully.
Ingredients :
400 g of strawberries blended and cooked to remove some of the moisture
150 g of salted butter room temperature
250 g of sugar
5 egg whites
75 g of yogurt
splash of vanilla
285 g of cake flour
2 tsp of baking powder
1/2 tsp of baking soda
1 tsp of salt
120 g of almond milk
Instructions :
Cream the sugar and butter until light and fluffy
Add in the egg whites and mix until fluffy
Add in the yogurt and vanilla and mix well
In a separate bowl whisk together the flour, salt, baking powder and baking soda
Fold in the dry ingredients into the first bowl gently
When the ingredients are just combined add in the almond milk and mix in
Finally add in the strawberry purée
Pour the batter equally between two greased 9 inch pans and bake at 175 for 23 min
