Ingredients :
500 g of strawberries (300 g cut up for the inside of the cake and 200 g for the decoration)
150 g of mascarpone cheese
4 Tbsp of light cream
50 g of icing sugar
300 g of lady fingers
Instructions :
Cream the cream and the mascarpone cheese until it becomes light and fluffy
Sift in the icing sugar and mix until stiff peaks form (5 minutes)
Dip the lady fingers in water on the flat side and place them in the strawberry shortcake pan on the side of the pan (pretty side facing out)
Place a layer of lady fingers on the bottom of the pan as well (this time dip both sides of the lady fingers in water)
Alternate between lady fingers, the cream mixture and the chopped strawberries (depending on your pan it can be 2 or 3 layers)
Let the cake sit in the fridge over night
Before serving, flip and place the cake on a plate, then decorate it with the rest of the strawberries chopped in 2
