Ingrédients :
3 eggs
75g of brown sugar
250 g of mascarpone
Lady fingers
Coffee
Cocoa powder unsweetened
Instructions :
Brew a cup of coffee and let cool down.
Separate the whites from the yolks.
Add in the sugar into the yolks and mix until light and fluffy.
Add in the macaroni cheese and whisk until well combined.
Whip the egg whites till stiff peaks (adding a pinch of salt can help).
Fold in the egg whites into the mascarpone mixture gently, to not break the whites, until combined.
Dip the lady fingers into the coffee rapidly on each side and place into the chosen dish. The lady fingers need to cover as much as possible the bottom of the dish.
Scoop the mascarpone and egg mixture, about half of the bath, and smooth out.
Repeat with the lady fingers and the creamy mixture.
Finally dust with cocoa powder before serving (if you leave it on it will become moist).
